FOOCHOW RED WINE CHICKEN RECIPE
It is a tradition to celebrate both the first day of Chinese New Year and birthdays with a bowl of Foochow red wine chicken. This one-dish meal contains sesame oil, lots of ginger, rice wine and rice wine lees. This preparation is not an easy process. People who are used to cooking have this measurement method – agak-agak. It means a guesstimate, an intuitive form of measuring that comes with frequent practice.

INGREDIENTS WE RECOMMEND
In a pot, bring water to boil and cook the mee sua or somen noodles.
Drain off water and refresh noodle with fresh cold water, set aside.
Prepare Foochow Red Wine Chicken:
Preheat a large pot.
Add sesame oil, add ginger, mushroom and black fungues.
Stir-fry over medium heat until fragrant.
Add the red yeast rice and chicken pieces to fry for a few minutes.
Add the Chinese wine and Foo Chow Red Wine.
Bring to a boil and then cover the lid and lower the heat and let it simmer for the next 45 minutes to 1 hour or until the chicken is really tender.
The cooking time is less if you use smaller pieces of chicken.
Season with salt and small pinch of sugar to taste.
How To Serve:
Portion out the noodles into an individual serving bowl.
Portion out chicken pieces.
Generously ladle with some hot soup and with some of the red yeast rice if preferred. Garnish with some chopped green onions and cilantro leaves.
